OK Amie & Sue, by "2 day" i really just meant that after all the baking stages that should not be rushed, then you still have to wait for it to cool and chill... so basically overnight!
(It's hard for me, and for all of us to leave it alone once we know it has been created)
Note: i reduce the sugar by almost half.

warning: many springform pans are 8" - but they won't hold it all. If that's all you've got... you'll need to put extra in a little loaf pan - then sample IT while delaying your main gratification.
Also, a good zester is key!!
